Today's Simple Joys # 4: Pasta, Coffee and Me Time

1. I took the day off today to go to the dentist and to spend "me time" at home.
2. No cavities. Yay! 
3. I drank coffee with salted caramel creamer in my favorite mug when I got home at 11 am while chilling on the couch. Coffee moments at home are  so divine! (I often drink my coffee black so this was definitely a treat.)
3. I cooked pasta and ate it all day. I really enjoyed it as we hardly eat pasta at home. Delicious!
4. I spent the entire day blogging and watched a little bit of "Gilmore Girls."
6. I cleaned up the garden and pruned away the dead stems. I always enjoy gardening. I am hoping that the one last sunflower seed that I planted will bloom into a sunflower even though it is already late in the season. Few more tomato clusters are hanging in there.
7. I lit a pumpkin spice candle for the second time this almost fall season. (Last night was the first time I lit the candle.) It will be fall in a week and half. I just love the smell of pumpkin spice, and lighting one for me is one of my traditions to welcome fall.
8. I loved how quiet it was at home while waiting for Mr Sweetie to come home. (I cooked enchilada for him for dinner.)
9. It rained for the first time since summer and there was even a low rumble of thunder that scared the poor kitty!

I am thankful for the blessing of having good dental health. I am thankful for the blessing of this day where I found solitude and rest while enjoying the end of summer and beginning of fall. I am thankful for the blessings of a cozy and warm home that I share with my fluffy cat  and Mr Sweetie. 

Simple and Delicious Fresh Tomato Pasta

1. Quarter a pound of marzano tomatoes. (Marzano tomatoes are perfect saucing tomatoes).
2. Saute them in 2 TBSP extra virgin olive oil.
3. Season with Italian seasonings.
4. Mix in with freshly cooked pasta (boiled according to package).
5. Top with parmesan cheese, fresh black peppers and red pepper flakes, if desired.

A perfect comfort "me time" food. Bon Appetit!
