Memorial Day At Home 2018

Monday, May 28, 2018

I am so thankful for an extra day of rest this Memorial Day weekend. I could not say it enough how my life has been so busy lately with work and family duties.

Mr Sweetie and I opted to stay home today to recharge our batteries. Saturday was sleeping in until past noon! We never  sleep in this late but that was how exhausted we have been lately! We then went to his nephew's graduation party in the late afternoon. Sunday was attending church with my family, and after-church lunch with my mom, dad and nephew at Sweet Tomatoes.  Since the next day is a holiday, Mr Sweetie and I stayed up and watched "Flatliners (2017)". I thought I would be very scary but I actually liked it despite the bad reviews.

Today, Memorial Day, was another day of sleeping in until almost 9 am after waking up at 7:30 am, reading then sleeping again. Oh, bliss! Another heavenly moment was being able to enjoy a pot of coffee with hazelnut cream and breakfast of avocado, mushrooms and tomatoes in between toasted Hawaiian sweet bun.

Mr Sweetie and I opted to stay home despite an invite from our friends to celebrate the holiday at their house. After watching another stupid movie, (I love wasting my time on stupid movies, BTW! Ha! Ha!) Lake Placid vs Anaconda, I started cooking at 3:00 pm.

Our Memorial Day Dinner Menu:
  • Dry rub bbq pork ribs
  • Caesar Salad
  • Peach Pie
  • Sangria
Dinner was delicious. The pork ribs were from Costco but I cooked them in the oven for 2 hours, and they came out perfect. They were moist and tasty. Caesar salad was from Costco as well while the Peach Pie was a frozen Claimjumper's pie. It was my first time baking frozen pie but I bought a frozen pie on purpose. A fresh pie would not have made it until Memorial Day. Mr Sweetie will devour it as soon as I brought it home!

Today was a good day. We enjoyed dinner while watching Warriors game vs Houston. It was a close game and we won! Go, Warriors!

It is now time to go to bed for another busy work day tomorrow. I am grateful for a day of rest, the blessings of a good meal, togetherness and freedom. I am grateful to the men and women who sacrificed their lives so we can continue to live in a country where we enjoy liberty and freedom, as imperfect as this country is.

Happy Memorial Day to those who celebrate!
